You need to counter attack after a lot of the deflects to keep the posture up and to cut off some of the combos.
If that doesn't work, you might just have attack that's too low for this boss.

No, that does not work since the posture of the enemies would diminish back to nothing before you get to parry again. The game is about keeping a balance of attacking, countering and defending.
