Neither of those are Metroidvanias. MGS1 is a metroidvania because weapons/tools you acquire allow you to access new area through functional gameplay mechanics, like the rocket launcher. Getting some random "special key" that only opens up a door and nothing else is not a metroidvania

A metroidvania means you get some gameplay mechanic like a boosted jump or a new weapon that both aids in combat/gameplay and has the feature of letting you backtrack and access new areas. Having a key item doesn't make you a metroidvania otherwise pretty much every game would be a metroidvania.

Zelda and Dark Souls are action adventure, with the latter having RPG mechanics, and possibly even being classified as a Action JRPG. However the elements in Souls games are secondary, the main feature is action-adventure.
