I blame the obsession with balance. MoM is fun because everything's fucking broken and the counter to bullshit is pulling out even bigger bullshit of your own. Some races are god tier, some are shit and are equivalent to playing with a handicap - but still noticeably different in what they can and can't do. It's in a way a 4X sandbox where you're experimenting for the fun of it as much as you are optimizing. New games tend to make the spells something dull and inconsequential beyond a simple numbers game like +10% Damage Reduction and just leave it at that. MoM goes "The spearmen now have 100% melee damage immunity. Enjoy."

Myrror is a real dice roll. You can get seriously fucked and end up surrounded by great drakes or other shit and it takes you ages to make any progress. Or you can get lucky with a few undefended nodes/lairs and shit with awesome treaure that let you expand quickly umolested and exploit them sweet magic roads to pop dudes up on the surface wherever you want.

I'll give you no terraforming but dominions has way more globals than MoM and more interesing ones too. It also has a literal wish spell where you just type in what you want and there are tons of options for it.

Dominions have piss poor province enchantments due to mage turn economy, range of casting and research restrictions. In Master of Magic you can start with Stream of Life in your book at the start. Spells like Dark Rituals are very useful. Dominions don't have global spells which shape the land, they only affect the scales.

The battles are nothing alike, there's no real city building in Dominions, the map is closer to Risk than Civ. And that's just the absolute basics of the gameplay mechanics, when you get into details you can go on and on, like crafting preset items vs customs, specific pearls vs general mana, one player wizard with set skills vs offloaded magic and breaking into paths with summons etc.

The generic ones most commonly used are the gem gens yes. But you also have gift of health for curing afflictions and tartarians. Forge of the ancients appears in almost every game too. Burden of time and frozen seas are a classic to just fuck with somebody over. And then there is astral corruption which just causes chaos. Also there is a lot of nation specific globals that are mostly all useful and great.
There are some globals that are essentially game winners so you kinda have spell of mastery sometimes. Utterdark being most common one.

Name me one MoM global that is as interesting as Burden of Time, Astral Corruption, Wish (arguably a global, try wishing for Armageddon), Utterdark/Theft of the Sun, and Frozen Seas.

Astral Corruption basically stops every non-blood ritual and fucks over anyone who isn't a blood nation.

Crusade increases maximum level by 1 as if in Dominions all units could sport a 6th star and started with 1 star minimum. Together with Warlord it unlocks Champion level which makes even mundane units monsters. And of course, there is Altar of Battle which upgrades new units raised in the city to max level.
10 Fame from Just Cause is worth 10 gold shaved off unit maintenance and it increases chance of attracting better heroes and artifacts seller.
