Because using a fightstick is only an advantage when you've trained your whole life in the arcades, where there wasn't a choice.
D-pad has less "throw" than a stick and that can be an actual mechanical advantage.
Hitbox is better than either.
Also, tangential, but there are other people you could make equally valid claims as being the best fighting game player in the world right now.

Fighting games are shit BECAUSE they're designed to be played with such a shitty archaic control scheme. See Smash Bros for an example of how to utilize a modern controller in fighting game mechanics. Analog movement, no lengthy directional input strings for moves, just one input pair. Not that I'm calling Smash a great fighting game, but the giants certainly could take the time to rework their control schemes for modern controllers.

I would like a fight stick for 2D platformers, though.

It should really just let you use the button only for tilts and bind smashes exclusively to the right stick, you're right. Fighting game inputs are WAY more finicky than that, though.

smash could easily work as a three button game.

it gets difficult though because a lot of tilts and some smashes you can angle down, forward and upwards so the stick solution works for that
