and can now do 6 Star quests. I'm a Monster Hunter beginner and have a few questions
1) What does this red symbol on the 4 star quests mean? 2) what does the white symbol on the 6 stat quests mean? 3) I can now craft alpha and beta versions of each armor sets. Where is the difference? Which ones should I craft? 4)Are my old armor sets of obsolete now? 5)Are my weapons obsolete now? 6)What should I generally do or focus on now?

Nobody cares about story in a MH game and they are loosely connected at best. MHW is a good starting point for beginner

Red symbol means there is an event quest of that difficulty. White symbol means there is an NPC in the hub that has a quest available to start if you talk to them. Alpha and beta versions are typically different in 2 ways. One set will have a more inherent bonuses, and the other will have less inherent bonuses but larger/more gem sockets. Your armor sets are obsolete unless you're using them for specific skills and don't have a better alternative. Your weapons are not obsolete, keep upgrading them. Just complete more quests and the game will continue to open up.
Also the Orange Complete "Abgeschlossen" is different from the blue Complete. Orange means there are no more quests of that difficulty so you're completely done with 1* and 2* quests. You still need to complete some 3, 4, and 5* quests, as well as the newer quests.

Which ones should I start crafting then? I guess the version with more inherent boni and then switch to the others later when I have gems for these sockets?

It's really comes down to what you need more and what builds you can make with the gems you obtain. As you get more gems you'll use them more, so you'll end up using the pieces with larger/more gem slots at the very end of the game. But there's no guarantee you'll get all of the gems you need so you'll just have to decide what's more useful to you at any given time. As you continue to complete high rank quests you'll unlock more high rank armor sets and you'll get a better idea of what you can make.

Where do I even obtain gems and how do I upgrade them? This is a new feature for me. There were no gems at all before.
Is high rank even the last difficulty or will there be a next step above that which would make this new armor obsolete again?

Gems will start appearing more and more often in as high rank quest rewards. There will be other ways to obtain them like synthesizing and trading that you will unlock as you continue to play the game.
High rank is the last difficulty. The high rank armor will not become obsolete. Low rarity armor sets can also be upgraded with armor spheres to be similar in defense to high rank armor sets so focus on the bonuses and gem slots and not the defense when making decisions about what to make.

You won't have much control over what gems you keep, but a good strategy is to keep as many gems of each time as it would take to maximize that particular bonus.
Say for example a gem has 3 tiers so equipping 3 of those gems would maximize that bonus. There's no need to have a 4th gem of that type. You'll be able to safely synthesize it for random different gems once you unlock synthesizing.
If you keep playing you'll end up with a lot of gems so you'll have plenty of time to learn the system.

I had a lot of fun because I was playing with the same guys I always play online games with. They played Monster Hunter games before I did so I was having fun learning while they were also helping me out. I'd definitely rate it a 9 out of 10. I probably have ~300 hours in it.

You probably have all the answers you need, but I just wanna touch on 4, 5 and 6 anyway. All Low Rank sets are obsolete period. For High Rank sets, thats really up to the player on what is "obsolete". All armor can be upgraded and augmented for better def, so it boils down to armor skills and slots. Having crafted every set in the game, I can tell you the majority of rarity 5 and 6 tiers will be essentially useless outside of very custom tailored sets by end game. However, having r5 or r6 mixed in with r7 and r8 pieces at end game is no big deal and doesnt effect your overall def that much. Plus, if youre good and dont get hit it doesnt matter anyway. What im basically saying is, keep finding better gear but dont get rid of your old shit bc it may fit into some specific build you wanna make later. If you dont really plan on doing tons if end game stuff. Weapons are different. With a few exceptions, basically any r7 or r8 you get will forever be better than lower tiered shit. As soon as you have at least an r7 weapon you wont ever be obsolete as far as weapons go.
At your stage you should be focusing on gearing up and progressing story. Do optionals along the way too.
