Like, are these RPG games? As a person who is unsure of RPGs, and really enjoys Pokemon as their only "RPG" experience, would a person like SMT or Persona?

They are RPGs, yes. In SMT you actually collect demons and fuse them, and can collect them to a compendium. The demons are all based on mythological beings, few exceptions aside. It's usually much harder and much less friendly than Pokemon though, and edgier thematically (shit about the balance of the universe between chaos and law, and how humanity and their gadgets are crushed between this fight). You might not like it if you jump from Pokemon to there, but hey, quite a bit of people jumped straight ahead to IV or Nocturne and liked it.
