I like Sekiro quite a bit, but they removed too much stuff and replaced it with too little stuff. The removal of equipment and different weapons does not justify what they bothered adding in. It's not like they gave the Katana a crazy move set, it is literally the same as a dark souls move set (...except maybe even less).

Just like literally every souls game, it's only difficult until you adapt to how the game plays. If you get past the first couple bosses and still find the game as a whole hard, then maybe you're just not good at adapting
