Every game has unique aspects that some players will love and others won’t. Every product is like that really. If you don’t like difficult combat systems that require practice and finesse, there is no shortage of games out there you can play instead. Not to mention making the game easier would piss off Fromsoft’s existing fan base who like these games largely because of the difficulty curve. They have no obligation to alienate existing fans for snowflakes who demand that every game be catered to them.

When he tries to grab you use his face as a springboard and double jump off his head, try to stay behind him, don't stop attacking him unless you're dodging.
This game wants you to pay more attention to the posture meter than the health bar, focus more on relentless offense and keeping that pressure up for the death blow. Try to get into the habit of blocking or parrying as many attacks as you can instead of avoiding them completely, even if your guard is broken its not a big deal, just keep blocking/parrying, and if you see an enemy go for a sweep jump on their face for big posture damage.

Its basically a clear indication to go to hirata estate and get the flame prosthetic. Its piss easy to get, guarded by basic enemies. Oil+one use of flame vent staggers him long enough to hit him 5 times. Rinse and repeat
