Because in most games the story has some sort of stakes on the line. Save the girl, stop evil, beat your foe... when you play on easy it doesn't mesh with such a story. Why are the characters acting so concerned about the events when you actively have to try to fail to not win? The game's story, the score, the visuals all give you a better experience when it's a bit difficult. There's a sense of accomplishment when you beat the game and are the hero.
