I've only played DS1, BB, and Sekiro so this is a guess but:
BB > DS1 > DeS > Sekiro > DS3 > DS2
Yeah I wasn't sure if you get better gear that damages him more or what but I can't evade his attacks and hit him enough to get him below 75%

If you're not baiting then this game really isn't for you
There are much better RPGs than souls games. You don’t really have to play any of them. Games are about being fun, and souls games are difficult because it fits the game. A game like Odyssey is easy as fuck but it’s still amazing, because it’s fun.
You have to farm blood echoes to upgrade your abilities, this means killing enemies and collecting the light that comes out of them and return to a lamp (be careful not to die or you loose the blood echoes although you can go to the spot where you died to retrieve the blood echoes)
At the beginning focus on upgrading vitality (hp) and endurance (stamina) and later in the game increasing strength helps. Also I hope you picked up the weapon at the beginning of the game in hunter’s dream. You don’t have to rush with this game, learn the enemy mechanics, learn to dodge and attack faster then they do and most importantly RUN PAST THEM. YOU CAN JUST RAN PAST THE FUCKERS AT THE FIRE, BE CAREFUL TO NOT GET BITTEN BY THISE ANNOYING DOGS AND BE CAREFUL ABOUT THE SNIPER’S BULLETS, JUST RUN AND DODGE. Also you don’t have to engage with the fat guy, just ignore him because your level is too low. When you get a good weapon upgrade it as soon as possible, this is not like other games (blood cocktails are good when fighting bosses)

ds1 and ds3 are about the same and dont listen to nostalgyfags, ds3 is more linear but who the fuck cares, if you dont mind graphics and shit go to ds1 otherwise 3
sekiro is very, very good but a different beast, also much harder than any of them
ds2 is weakest of from soulslikes, had pretty varied pvp as its only good quality but with ds3 it died, play the last unless you really want to play them in order for some reason
des didnt age that well at all but still way better than das2, also it has a weird system where dying in human form will change like location level of something, i dont remember whats its called but its only fixed with online play and its dead so you will probably get locked out of a few minor things, nothing serious but can be annoying
id say that if you want more rpgs you go to 1 or 3 depending on how far youre willing to step down graphics-wise, if you want more of an fast action game with mood and progression of a soulslike then play sekiro. souls are slower than bb, sekiro is faster.

Going from Bloodborne to DS1 is jarring as fuck. I did it recently and the gameplay felt horrible after coming from something as slick as Bloodborne, but play it as a primer for 3 and soak in the ridiculously good interconnectivity in the level design.
this is actually helpful but the fact that none of this was clear to me from just playing the game screams poor game design... I didn't realize you could sprint by holding roll until I discovered it by accident. I'm not saying I like to be handheld, I just feel like how you're supposed to play the game isn't very clear
If by giant fatass you mean the brick trolls, those enemies are literally there to teach you how to parry. Their parry window is absolutely massive and they're supposed to be a challenging fight for a noobie so they think "there has to be a better way, what was that shit the game told me earlier about doing something with my gun at the right time?"

I've only played bb, ds2, ds3, and sekiro.
DS3 or Sekiro would be the next logical ones to try. DS3 has art design similar to bb, but way larger and more austere in scope. The gameplay is slower and will fuck your shit up while you adjust. Sekiro's gameplay is amazing once you get used to it, and the world has amazing verticality, but the art design is far more normal, grounded in reality. DS2 is an unholy abomination in a lot of ways but it's interesting if you really gotta scratch that itch. It's ugly and plays like shit smothered in more shit.

The game doesn't really outright tell you things, it hints at you instead. The brick trolls for example have been placed there to teach you that some enemies are going to push your shit in unless you learn how to parry them. The big mob by the fire is there to teach you that luring enemies one by one is a good strategy, or that not every fight is one worth fighting as you can run straight past them. You've got to try to understand what the game is trying to show you.
It's not that hard, man. But it's a situation that forces you to figure out the mechanics of the game, and its early on. If you're having a hard time, start over and choose the axe. Then start on the upper part of the street you can get to before hitting the huge fire.
You'll get to take out one of the shooters, the fence will protect you from other shooters, and you can pull 2 or 3 of the enemies to you without having to worry about the dog, the guns, or getting mobbed from behind.
He's early enough to where he can't even level up yet, dude. You gotta get to a boss to get your first insight. You can't level up before that.
Oh yeah, fuck. Run up the stairs to the hairy boss man and get one insight, you don’t even have to beat him (you get insight when you see a boss)
Also when you have enough insight you see creatures you couldn’t see before but that’s later in the game
You upgrade by the doll in hunter’s dream (the lamp transports you there)
dark souls 3 is a natural next step from bloodborne and the second dlc is god tier, sekiro is kinda like bloodborne with stealth mechanics
Running up the stairs is a bad idea, dude. You gotta get past those two wolf beasts on the bridge, as well as a guy guarding the house, 3 crows, and a brick ogre. Better to get past the bonfire, to where the first brick ogre is, and then smash open the caskets to go the back way to the house (where you can also easily get to the Central Yharnam lamp, and then go through the house to get to the boss.
BB still tops Sekiro for me. While the gameplay in Sekiro is great, BB also has great gameplay. But BB also has an amazing setting, while Sekiro’s just isn’t on the same level. Music isn’t as great, locations aren’t as great, characters are ok but I don’t think the setups for progress were as interesting (hearing about the vile bloods and then getting to Cainhurdt, hearing of Ludwig and then fighting him in the dream, Byrgenwerth and seeing all of the many eyed monsters and Master Willem, seeing the shut church gates at the bridge and actually getting inside after passing through the wreckage of Old Yharnam etc.)

If he can't get past the bonfire area, and gets his shit pushed in by the brick ogre, there's no way he's getting past both wolf beasts. Especially if hes just running past everything at base level and getting chased by everything. It gets too narrow on the bridge to easily run past them.
If he can’t do that he should quit the game or cheat the code to max out everything to 99
