Mainly taking advantage of the improved hardware: more detailed enviroment, better controls, deeper combat system, additional areas and dungeons etc.
Maybe add a mechanic to switch between time periods outside of the Temple and incorporate that into puzzles, Titanfall2 style.
Also little stuff like sidequests, maybe outfits like in BotW etc. I'm sure a lot of stuff ended up getting cut when they made the original.
This has been happening in the film industry for years. I expected a similar level of quality from the game industry, but these nip developers actually put effort into these remasters.

I'm not a big fan of BotW, but I think a OoT remake with its engine could give us an amazing game.
Make a standard Zelda experience but with a smaller overworld with more stuff to do (and more enemies obviously), have the dungeons almost entirely remade to make use of the crazy physics but they should keep some puzzles of the original, more interaction with secondary/background characters among other things.
