Bottom is best, all available classes can be previewed at a glance

The one where you can decide what style you prefer on the go.

top for RPG
bottom for multiplayer FPS

I remember my first time playing Seiken Densetsu 3, and I have no choice but to choose top option. The surprise element in each job tier is wonderful

What is going on with that alchemist?

Pretty much this

Bottom for sure, because I'm way more likely to get to play all of the different builds that way, rather than the top where I'm likely to make 1 or 2 builds completing the game and then completely stop when I tire of it.

Top I like feeling some sense of progress

This and OP's top option are my favorites.

Why do all roads lead to mime

1 for singleplayer, 2 for multiplayer.

Mime requires all roads to have been taken. It's a master-of-everything type class.
