I'm currently playing Good will Tell and it's pretty awesome.
You play as a Ronin, Hyakkimaru, who is "the chosen one", so 48 demons made a pact with his father that they would give him power if he offered his child. Each demon, called a Fiend, took one body part from the child. Arms, legs, eyes, but also things like blood platelets and his cerebellum.
He was abandoned and discovered by a master doctor, who fit him with weaponized prosthetics. Hyakkimaru learned to navigate the world with psychic powers.
Each fiend is a boss fight (most optional), and each time you kill one you regain a body part that offers a stat boost, or a new ability.

I've never been too interested in jrpgs, Earthbound was a rare exception because I enjoyed the setting, but generally I avoid stuff that is overly "weeby" if that makes any sense. I could probably get into something like Dragon quest though, it looks alrgight
Also adding psi-ops to the list, I played a similar game called second sight

I remember the plot actually being good, especially the music too.

This is good as fuck actually. I love the free fall mechanic and how the game switches to like a fighting game when you confront Wolfen.
