I've only played persona 4 so is it best to play the original persona game before going into it or does it not really matter?

Pop'n music portable is worth trying if you've got a psp/vita lying around, it has a pretty steep learning curve though

The models are different in Future Tone (the best one) so idk if that's anything for you

I wouldn't call something like IIDX a casual's game and that has visual prompts

Emuparadise doesn't have IIDX though, unless I've somehow missed it
