I can't beat any of the Snake eyes, neither the one at the bottom of the ditch nor the one in sunken valley. He just does too much damage, and half his attacks are gun attacks so its so hard to break his posture.

That's why you always use your sneak attack

Have the same question. The difficulty jumps from "spam to win" to "you will die in 2 hits and you don't deal damage at all" right away. And the infamous camera doesn't help either

Learn to parry. Be patient and chip at the enemy's health. Less health means less posture regen. Dodge/Deflect/Jump respective unblockables. Reset the situation if you can't handle it.

You can't sneak about mini bosses twice and you can't sneak attack real bosses at all. Some mini bosses also aren't sneak attackable.

Nice hints user. I think the most difficult thing is escape from Dark souls mindset (roll/roll/light attack). This game is like parry/attack/parry/attack.
