Driving in real life (assuming big city traffic) is a chore, user. Self-driving cars can't come soon enough.
I always liked the Initial D games in the arcades. You would get a print out card that carried your upgrades and stats which gave the whole thing a sense of real progression.
Also drifting had a ton of skill to it so there was an obvious skill ceiling / something to work towards
The only kind of racing games I like either ones where you can fuck the shit out of your car by crashing it (Burnout series) or cartoony mascot kart racers.

I think your assumption is fairly unlikely given the relative depth of car customization that popular racing sims offer compared to what someone lacking any knowledge might want. Sure even that's streamlined for non-enthusiasts, but it's still more work than necessary for the audience suggested.
It's more likely that people enjoy going fast. As if it makes them feel alive somehow.

Yeah drifting was that games skillshot. Car model / tires / weather conditions / speed and when you brake all affected the drift. If you hit any walls you'd be immediately slowed down.
I play assetto corsa in vr to get ready for summer track days. I don't really like arcade racers, just like doing either track days in AC or just time attacks to get better times. Sometimes try drifting too but I suck at it.

It's just rewarding once you get good. Specially in sims. I play Assetto Corsa with a friend and it just feels great once you finally can make multiple laps around a circuit, and you start finding new, faster lines, and finding the limit of the car.
It's even more enjoyable if you actually like cars, so there is that. Steep learning curve but it pays off.
