Hell, looking at reaction videos made it seem like people didn't care at all for Simon getting in, they just played up a reaction for views.

I use Incineroar, the king of "projectiles make my life hell", and never have too much trouble with Belmonts. They seem fine and balanced to me.

Symphony of the Night is a very easy game and it's well known for a reason, it's pretty good.
If you want to try Classicvania instead 1 and 4 are good places to start.

Most Nintendo fans (i.e. Smash Bros' audience) are most familiar with Castlevania 1-4, not Rondo or SotN.

If you're referring to Rondo, that's incredibly inaccurate. Rondo is still somewhat obscure seeing as how half the world never got it until just recently. SotN is the most well known game and while, yes, Richter IS in the game, it's only in the prologue and a few scenes afterwards and he looks totally different because of the new artist. Richter is only known by big Castlevania fans, but to people who don't know the series or folks who only ever played a handful of the games, he just looks like another anime boy, like he's Ike with a whip.
