Sims 4 has the best Create-A-Sim. It definitely is a step back from the things they added in 3 but at least it doesn't run like complete shit 5 years in with all packs installed. The charm of 1 will never be topped though and I'm surprised they never bothered with another Makin' Magic type expansion pack.

Also, I'm not sure if I'm 100% on this but Sims 1 is the only one with a recording studio option in the Get Famous expansions. I think that's worth putting in. I think each Sims had something the others had not done.

I agree 100% with your ranking. I just really can't make myself like the uncanny valley pudding faces in TS3. If it had a more cartoony graphics style like the other games, it would probably be number one for me.

I'd love TS3's open world with some TS2 gameplay (aspirations, turn ons/offs etc), TS1 music/sense of humour and TS4's graphics. Maybe throw in some of the stuff TS4 did right like the expanded vampires too.
