Also: top one looks better because they actually went with something that can actually be considered an art-style, instead of some beyond generic hyper-realist shit.

The only one I've seen that actually looked like it captured the spirit of the original was that Mario 64 Unity remake with Bob-Omb Battlefield, that one actually looked pretty nice and faithful. So many of these Unreal Engine remakes just make everything try to look as realistic and detailed as possible instead of having any art direction at all.
They're the game equivalent of Disney's live action remakes they keep pumping out, and the same people eat them up.

I'm unironically against high definition graphics because all it does is drive up budgets and force higher requirements for hardware, that or massive downgrades to make it fit. I'd rather a game look like Terraria or Minecraft and have FUN gameplay, then look like a super ultra realistic Call of Duty shooter that runs at 4 FPS and needs 500 gigabytes of space.
