Play the translated ps2 remakes of 1 & 2 (or skip 1 if you really hate dungeon crawlers) and then play 4. 3 is weird and doesn't have much at all to do with the story.

You might as well start with PS1 if you want to experience the series (for which my same comment applies). Both are quite impressive for 80s jrpgs but nevertheless include a ton of monotonous random battles that I consider a waste of time. PSIV would probably be more palatable as the gameplay is a bit more involved and there's a bit more to the story but nowadays I look for jrpgs with grid-based strategy, action combat, or more involved unit building stuff to keep me engaged.
If you do decide to start PS1 be advised that there's a patch to use the FM music and an improved translation if you're playing on emulator.

Is the PS2 remake any ''better'' in terms of grinding?
My only ''contact'' with Phantasy Star series was PS Online (all 3 episodes) and Universe. I recently bought Phantasy Star for Switch and am planning on starting it soon. Should I play original PSII on Genesis emulator (or Sega Collection) or PS2 remake?
Also, I heard that PSIII has some weird level up bug? The fuck is that?

Well, I dunno. The first series of games are basically forgotten completely. I'm not sure any of them are recommendable, and as far as I know are completely irrelevant to the later games. They're very outdated now gameplaywise.
I played these when I was real young and never continued after 4, so I can't say anything about the remakes.

PS1 on switch has all the grinding removed (4x XP and gold from fights, 1/4th the random encounters).
It also has an dungeon automapper and item tables so you don't need graph paper/a guide.
It's also a beautiful game with tons of unique style.
It's basically the perfect middle ground between simple console-style RPGs and PC dungeon crawlers.

will be really helpful. Like I said, I haven't played PS1, but I know about its dungeons, lack of minimap, compass (which doesn't seem really helpful, lol). Obviously, I'm talking about the Master System (original) version.
