Which one should I start with?
3 and 4 are the only good ones. There are some that prefer 3 to 4, but the general consensus is that 4 is top dog. Either way, I'd start with 3 since 4 upgrades a few things and going from 4 to 3 (like I did) will feel jarring in a few aspects.
Generally speaking they get better with every release so the honest answer is just play 4 but then you miss out on the others as you probably won't like them as much if you play after. I think you should at least do 3 and 4. If you have some degree of tolerance for slightly ropey game mechanics in a series that's finding its feet just play from 1 or 2. You could also play Frontier on the wii which is SORT OF a remake of 1 and a lot better, but it has one absolutely terrible mechanic (runeys) that I highly recommend using an emulator to just completely ignore.
Stardew if you want pure farming/economy/social life simulator; Rune Factory if you want all of that but with actually decent (especially in 4's case) combat

You run a workshop and compete against other people's shops and stuff. It's like HM just remove the farming, and replace it with more ruin exploring and building things for yourself/other people. Pretty fun for what it is worth.

Yonder: The Cloud Catcher Chronicles, it kind of falls into the whole Harvest Moon type of game, and its pretty fun to explore, god a bunch of shit to find

Portia fairly fun, but they're still working on it even after getting out of early access. Making sweeping gameplay changes adding features. Also voice acting is not complete.

Not really clones since its made by the same people and is a spinoff. Also it puts a lot more emphasis on combat and monster collecting more than it does farming. RF4's farming area is a fraction of the size you get in a harvest moon game.

There was this 3DS game called fantasy life that was pretty good, although not quite a “clone”. It has job classes like an RPG but the classes are things like fisherman, miner, forager etc. You level up your skills in order to create better items. It had some combat elements too. Sorta felt like DQ9 but with more slice of life elements.

Rune Factory is fantastic, especially Rune Factory 3 and 4. It's made by the same people that used to do Harvest Moon (now Story of Seasons) and is very similar but adds combat and RPG elements.

Great game but ultimately short and not really rewarding in the Sim aspect. Lots of promise that they could have expanded on, but instead reeled back for a mobile game.

What part of Stardew did you find 'piss easy'? Because farming and relationship aspects of many other games aren't any deeper and combat becomes trivial in RF once you've leveled up enough.
It's a shitty knock off of RF, which is a spin off of HM.
