I've only played Fallout 1. It is a very different from New Vegas, but I would say much higher quality. Better writing and mechanics by far.

Alright, I'm about to start FO1. Is there anything I should know beforehand, or is it best to just go in blind?
I went in blind and the only things I had to look up were some UI quirks, like how to drop stuff from the inventory and use skills. Other than that, nothing, and it was very fun
take notes of what people say. theres no exhaustive task log and some people dont have repeatable dialogue.
How strict is the time limit? That's really my only concern.

Absolutely. NV wouldn't exist without 3. Which is why I'm hesitant to call NV outright better than 3, since isn't that like the bare minimum you have to do when the vast majority of your assets are from the previous game? Even then NV has a lot of issues, a LOT.
Bloodlines is literally New Vegas-tier buggy and unfinished.

Fallout 3 considering immersion and atmosphere and details is million times better than NV. It actually feels like a place its supposed to be.
NV is plain and simple a litteral attempt to copy FO2, along with its factions and tropes- unoriginal in most things, and whats worse: unfinished. The world is empty and most locations very plain and overall it does not feel at all like a place it supposed to portray, but a parody game.
Wasteland 2 is not FO, but its still did better job being true to what FO1-2 were.
ATOM RPG, despite unrelated setting, is absolutely faithful to ACTUAL Fallout spirit, not just copies its ui/gameplay.
NV positive responce when it released was because of two reasons solely: it was actual update to FO3, improving some of its systems, mainly combat and Perk system. It was nostalgia since Nevada felt like call back to original Fallout. Too bad, the game still was nothing of original, but just FO3 with different skin and less content and no immersion.

I didn't like 3/New Vegas because they seemed like games designed around FPS mechanics but with terrible level design ill-suited to an FPS. I've heard Fallout 4 does a much better job in this regard. Any truth to this? Haven't played it

I played Fallout 1 for 20 minutes, nearly puked because of the combat and movement, and haven't touched it since.
They are both fun games but combat can get pretty tedious after awhile and certain skills and stats are just way too good like agility being high being mandatory due to how combat works. However they really do not make games like this anymore at all so its recommended you don't be a gay cuck and play them.
