Shit's always going to be dated because of animation timelines (Reiss covers this pretty well in his book), but also because you have out of touch people writing the show (which is covered by just being tangentially aware of people like Reiss and Jean).

South Park has kept pretty close to the trends of the time. Kinda stopped following SP but their Warcraft episode for example was a good ep on it's own and didn't feel too desperate in terms of staying with the trends. PewDiePie episode similarly.

Fortnite is huge, Ninja and Shroud are by every standard hugely successful as well. I don't see a problem. Of course that's not all gaming has to offer, but it's more than that. Simpsons is largely going with the times and brings in relevant content and events. It isn't about gaming so much as it's about the rise of streaming as an occupation, esports, and this battle royale. It was cooler when south park did the WoW craze though.

The character of Roy is treated as a joke (Fox wanted a new family member in the Simpsons and the writers were completely against the idea), which shows a cowardice towards changing the status quo. It's the reason the Simpsons always feel like they are 10 years behind, the series is stuck in the 90s because they are afraid of changing too much. I mean, ideally it would have been cancelled 22 seasons ago.
Some years later South Park proved you could have a new main character if it's written well enough. Kenny wasn't much of a character, but he was iconic. And yet they dared to swap it with Butters. South Park evolved and that's why, even if you think some of the new seasons suck, it has stayed relevated for far longer than The Simpsons.

Animation takes a REALLY long time. South Park literally produces their episodes, from writing the script to animating and recording dialogue it the week before they air, which is why it can be so timely. This actually hit them on the ass when they were doing 2016 election eps and Trump won unexpectedly, they had to scramble and alter their episode where Hilary won.

That's because it uses mannequins to animate. Sometimes it works well for the show( Archer, South Park kept its weird paper charm by using this) but most of the time it looks like trash. When a series goes on for excessively long, it becomes more and more expensive to animate traditionally as seasoned vets who have years animating these characters to leave.

By using mannequins and less frames with digital tools, you can create more episodes and at a more consistent quality( even if it is bad)

I remember back in the day, there was an episode where Bart wanted a Mortal Kombat style game for christmas or something. They actually came up with a fake name to make sure that, even if the reference was obvious, it wasn't the exact same thing.
