Are there any games that are like that one mission from Battlefield 3 but on a larger scale?
Something realistic in terms of setting and jet movement that isn't a full blown simulator
Ace combat's story is always too cheesy and the flight is too unrestricted. Granted the closest thing to what I want would be Ace Combat Assault Horizon which is the least Ace combat game there is
All I can think of are Vector Thrust and Project Wingman.

I once heard of a company called Thirdwire (or Third Wire, not sure which), that made jet games that were somewhere in between Ace Combat and hardcore sims in terms of realism. You might want to look them up. I think a few of their games don't work on newer versions of Windows, though.

if assault horizon is the type of game that you want, then you have fucking horrible taste. the BF3 mission is on rails for most of the time, why would you not want to fly a plane in a plane game
Anyways, look at DCS, there are jet modules that are less than full realsim and you cant click any of the buttons or the switches, you literally just jump in and go. They are made exactly for the people like you.

ace combat is an arcade flyer so the physics are far more lenient that they should be in a more real setting

the only good thing about 6 and 7 are the gameplay. AH story is super generic and by the numbers but isn't nearly as cringy as 6 and more coherent than 7
