They were a team of, like, 6 people making the most advanced game ever. They had space to be creative (I mean with respect to the game as well, not just messing about with axes and cars).

Nowadays, videogames are too complex. A single title might be made by literally thousands of people. And the company has quarterly finances to think about. You certainly won't get a technologically cutting edge game made by a team of 6 people. Maybe a breakout indie hit.
