Guild Wars 1 and Diablo 2 are always going to be mention because of how good they are in representing Necromancing.
Age of Conan was pretty good that first month or so. You could summon like 11 dudes and use the hide skill to be completely invisible while they wailed on whatever you want risk-free. You could easily kill anyone even several levels higher than you.

Why can't I do that in more games?
Devs no longer care in general (it's a money-making industry as opposed to passion projects that will hopefully make money) and many don't really play tabletop in particular. And even tabletop lately is getting more and more emasculated and tame. Back in the '90s: "wouldn't it be cool if we made X? Let's do it!" Now: "what will be the ROI?"
