It definitely looks more fun in co-op. Having to manage your stats while others are doing the same makes it more engaging.
I think there are routes for every minor character. Expansion adds 2 more main dates and more routes for the starting 6 you can date.

You go to a monster high school and prom is a few weeks away so you want to find a date. Standard visual novel flare of upping your stats and trying to woo and maybe eventually bang your monster of choice depending on the route. Multiple routes and you don't have to date the characters that tell you to, but they feel like hidden back doors you gotta find the right triggers to get them.
You can also play in co op, up to 4 players one by one can get play a route of their choice at the same time, so you gotta play more strategically and the other players might cock block you to get the stat or affection point you need. Might be a bit more difficult to land a date or things going south, but it's also more fun to play with others.
The only problem is that some of the options might be a bit obtuse, (you might need a guide on what your character might need) but multiple play throughs are quick and you'll get the gist of what the game is asking you with a bit of time.
