RTX series is indeed overcharging for what is probably going to end up being a gimmick, even though the technology behind it is very much real.
But you see, a 1080 Ti was around $600, a 2080 is $700. They perform about the same, so if you are "going all out with your money", just be aware you'll pay that $100 more for what is essentially a gimmick technology you may never use.
2k USD got me 2080, 2700x, high end asus mobo, 3200hz ram, m2me ssd, etc. Unless your funny money is worth less than my funny money, that's pretty overkill unless you wanna do something insane.

I couldn't stomach playing current games at medium settings at below 60fps for another year. Plus, there are many great games this year like Phoenix Point and Dying Light 2 and I wanna get my PC ready for them.

I did buy Pascal. I got a GTX 1080 Ti at a price drop right before the cards were announced with EVGA step up primed, so I'd only pay the difference in case the new cards were better. I decided to go for the RTX 2080 anyways just for the RTX gimmick, but I think the smartest choice for anyone would have been to pick up a 1080 Ti and just hold off until the next gen.
It's a bit cruel on anyone who didn't upgrade to Pascal though waiting for the current RTX gen. There are souls out there on the 970, a card from fucking 2014 (That's when fucking Dark Souls 2 came out) who were waiting for this gen and will be told to wait "a bit longer" for the next one since this one is not worth it either. I'd say just do it. Yeah, it's less cost-efficient, but are people really going to wait for another year or two so they can save $100?

The best part is the RTX cards have some issues with running Physx already. For example, my 2080 absolutely dies if I turn the feature that uses it in Fallout 4. I was experiencing terrible FPS drops until I figured it out and some people were discussing it's happening in another few games that use PhysX. I really wonder if the next gen of cards will be the "RTX 2180" or if they will just abandon the concept for now until it's more fleshed out in the future.

I spent almost 5 years on the 970 before getting a 144hz monitor this year. Even though the 970 was "fine" for 1080p at mostly good settings even all this time later, I figured it was time to splurge and overkill it a bit, at least once in my life. I heard the pleas of "wait until next gen, it will be better!" but decided no matter what, I'd make a decision and buy either a next gen card or the 1080Ti if the price was good enough and the new gen had nothing worth it.
It's a bit of a meme but it's true. If you wait for the "best deal" gen you may be waiting for 4 years or more. And again, to save what? $50? $100?

Imagine getting a card like the 970 now though. $330 for a card that's still performing solidly on pretty high settings and 60 fps this far down the line. Meanwhile the current RTX 2070 is approaching the $500 mark and I somehow doubt it will be still performing so well in 5 years from now.

I've been on a 290 pretty much since the start of this console gen but it's pretty much on par with the 970.
No reason to upgrade unless you really want 60fps/4K in the newest games.

Yeah, but what I mean is it's actually bugged in it's current state in quite a few games. I was running Fallout 4 (after uncapping) easily over 144 fps at max settings, even with the Ultra godrays setting that is known to kill it. Then turning on anything Physx on lowest setting cut the fps down to sub-60, hovering closer to 40.
I also thought I was going insane when I played Destiny 2 today and my fps was hovering around 70-90, when I remembered it being locked at 144fps the previous days. I figured it was just the new area that was more demanding or something, then I saw one of the latest windows updates specifically states "lowered mouse and gaming performance in some software (eg. Destiny 2)." Now I don't know if that last one is just Microsoft's fault and affecting all cards but I have a feeling RTX cards support will be a bit bumpy.
New Ryen is out in a few months, I'd wait for that at least.

I've never seen a case of two cards (SLI) significantly outperforming a single card of same price. I'd honestly avoid SLI just for the headache of games properly supporting/tweaking you may have to do.

RTX is amazing and the future. But in it's current implementation it's basically "hey, we got it to run real time with extremely powerful cards and it doesn't even completely destroy performance, just mostly!" Maybe that's what people meant with 4K. Of course 4K is amazing, but it took a while to get to a point where cards can run it on a satisfying 60fps and even now it's not guaranteed on newer games, especially on the highest settings.

There aren't any, and they don't actually outperform the 2080 so if you can't get one for less than $500 then don't fucking bother. Honestly, as nearly 40 year old man with a family, a house to run, career to contend with and other adult responsibilities - I just don't have the time to game like I used to when I was a carefree teen, festering in my bedroom all day. I would often start a game and never finish it. I was really starting to think I had just outgrown the hobby. I just don't have the time anymore.
But the Switch has given me that time back. I can just pick it up and take it anywhere - even just around the house. Whether I'm working in the study, cooking in the kitchen, chilling in the backyard, keeping my baby stepson company while he falls asleep or simply relaxing in bed - the switch is always there to fill in the cracks of my day. And if I get more time to myself, I can drop it in the dock and play on my 60" tv in the lounge.
The Switch is a fucking Godsend. It's perfect for the busy nuanced lifestyles of adults. Bedrooming dwelling teens can't understand the appeal and are no-doubt baffled by its success.
