Now that's some old ass build. Even my aunt who only browses web has Phenom 955 she got from me when I upgraded.

GPU is a solid choice, but when it comes to CPU you're better of waiting for new AMD CPUs. Intel is in full shortage mode and their prices are very high while AMD has made crazy progress and Zen 2 is sure to be a hit.

1660Ti looks fine, but I don't really mind playing on medium-high for a couple years, and it's not that much more powerful, not enough to warrant an upgrade imo.
In a couple years, if RTX prices drop a bit I might consider one, or I'll just wait for the 3070 or 2660 or whatever.
This year might have some interdasting stuff, with Navi, 1600 series, Ryzen 3000 and Cannonlake, but unless I can either get a really good deal or suddenly the 1060 can't do shit anymore I'll stick to what I have.

You should never use a single RAM stick. You need two sticks and it's best to buy them in pack. You should sell the stick you have and buy 2x8GB pack. Seeing as you have Intel, 2400Mhz should be enough.
