In the case of Crash it's because they largely didn't attempt to preserve the original aesthetics and made everything a lot cleaner and shinier in the process. Note the lack of angry face to the right of the boxes, and the edge of the pit, for examples.

Developers typically have no idea why Game 1 was successful, so they continue trying new things with Game 2 and end up alienating fans of the first game. Only then do they fix their mistakes with Game 3 and actually improve on the things people liked about Game 1.

Big devs back then were told to make a fun game, most of the time that was it.. Everyone chipped in with their best ideas. AAA devs today are slaves to the specific demands of the suits; "make it more like WoW", "make a battle royale", "make a Warframe clone", "make it mobile". No one has a voice except the guy with the money. The devs might be act like they are invested in the project, but it's not the game they want to make.
