It's a videogame. It gives you a challenge. You beat said challenge using the abilities the game allows you to use. There's story between challenges. There's also exploration. Eventually you face a big challenge and the game ends.
It's literally a videogame. What's the appeal of any videogame? Because that's also the appeal of Kingdom Hearts. It just happens to be Disney themed.

Nomura wrote a sprawling, highly experimental story and made Disney not only pay for it, but lend some of their most recognizable properties for it.
