Both GBF and FGO are only as grindy as you want them to be, and you can space out the grind to make it painless. People who say the grind is unbearable are simply too impatient to play the long game. For most of the beginning you can get by on the SSR weapons and summons the game gives you by clearing story and side story chapters. You'll eventually want to build a proper weapon grid but that won't be until you unlock omega raids and that isn't until quite a while into the story so take it easy for the time being.

I got by in the early game with shitty characters and next to no grids, so imo it's not anything to stress about. Just take your time and get to know the game mechanics in your own pace. However, if you happen to get a sunstone, a damascus bar or a gold brick (like from a random giveaway etc), DO NOT use them. Save them until you're 100% sure what to do with them, they're limited and valuable upgrading tools.
