you're ignoring the biggest drawback of pokemon's approach to evolution, though. because it's railroaded and permanent, you're pretty much screwed if game freak decides to ruin a pokemon you like with shit evolutions. example: rowlet getting ruined with dartrix and decidueye. your choices in that scenario are to either use an everstone and get stuck with a nfe, or watch your pokemon turn into a hideous freak.
with digimon, there's a lot more freedom and choices. this makes it more difficult to keep track of who evolves into what, but it also means you're not stuck with a decidueye situation.
both are valid systems with pros and cons.

I don't know much about Digimon, but I assume the multitude of evolutions and crossovers are to give depth and variety determinant on how the player plays?
I.E. you don't have to grind or think about the evolutions, but instead get the one determines by your active choices in gameplay.
I could be wrong, but that would to me be the most logical step.

Dawn/Dusk if you want a plot-light simple monster-battling RPG.
PS4 games if you want a more plot-intensive RPG experience.
DW1 if you want something uniquely and distinctly Digimon.
DW4 if you want a dungeon crawl/loot grinder ARPG.

It's the best monster raising game out there.
Download the UK PAL iso since the American release is bugged to shit and horribly translated.
Also, use an evolution guide since it can be daunting for newcomers.
