Multiple reasons. The first is eggs are shit tier. They have limited space for nutrient providing yolk, meaning if you want something that takes a long development time like a human you'd need a massive fucking egg.
Animals that lay eggs tend to have young that are born with enough development to survive on their own and eventually reach adulthood (I.E the story of fish, born plankton small and keep eating shit until they get big).
For vertebrates with complex brains, this doesn't work because brain development of that magnitude occurs much earlier in development hence why so many mammal babies are fucking useless and need to be taken care of for some period.

Another reason is it's too fucking late to evolve eggs. Evolution doesn't "work backwards". Most ancient mammals had 5 fingers, many such as carnivora lost them. The Panda bear developed a bone spur to work as a "thumb". It couldn't "evolve backwards" to bring back a 5th finger back as a thumb even though within its genetic material exists genes for the 5th finger.

Sexual dimorphism in mammals tend to favor males for the most part, in the case presented, bulls tend be stronger than cows and male goats stronger than female goats. Orcs and trolls dont seem to follow any animal for inspiration in this case, so its probably just based on our own dimorphism. The only real problem really is that it kinda makes the wold a little blander if all races have the same pattern. An amazonian trope is always a fun one and if you have to base on an animal you could make an insectoid race (where females tend to be stronger) or if you want a mammalian, hyenas are a classic matriarchy.
