Because especially the triple-A ones are made for the "wider audiences", meaning they're casualized and streamlined to hell, just so that the neighbor's 7yo kid could "beat" it on their own. Usually they also rely on endless jumpscares and/or gore shock value, while otherwise being yet another "cinematic experience".
There's barely any punishment involved in the games. No more manual saves, just checkpoints. No more semi-open exploration, just linear corridors. No more well designed and balanced, pre-placed supplies and threats, just auto-balanced and procedural shit. And instead of puzzles and exploration, shooting shit or "stealthing" is the new hotness.

Literally everything you said applies to indie nuhorror praised by people who whine about jump scares, it all runs on the same axis of making things "fair" for the player when horror inherently needs to feel unfair and unpredictable to be scary.

I should also note that a jump scare is the best punishment you can have in an horror and keeps the players on their toes even if the game doesn't have many jump scares, just the possibility of it happening is enough to enhance the experience, if you do something like Soma where they explicitly avoid jump scares you know it will never be scary and since the game doesn't have anything going for it other than the possible scaryness it just becomes a walking simulator.

Gory shooters are their own problem but completely removing any kind of way to fight back is an even bigger problem, stuff like limited ammo and janky combat is good for greatly raising tension and keeps you deciding between fight or flight, without combat it's just one-dimensional running and you never feel like you might be doing the wrong decision, there's no tension in wasting ammo or anything.
