Anime is a distinct art style, whereas "JRPG" and "WRPG" are not distinct genres in terms of gameplay; all these acronyms tell you is that they are RPGs from said regions.
Besides the fact that you swing swords the combat isn't similar at all. There are no dodging mechanics, and each attack is exactly one button. The skill points of your character are more important than you managing the positioning of your character and pacing yourself.
Not to mention Dark Souls came the exact same year as Skyrim. But Demon's Souls is older than both, and even Demon's Souls was mechanically similar to King's Field, which are earlier FromSoft games. Dragon's Dogma is combat-wise similar to previous action games by Capcom and taking in some additional inspiration from japanese games like Shadow of the Colossus. Western games did sort of inspire it though, but more in the open-world design.
