Every time I try to start playing skyrim seriously again I just get bored and want to mod it into a sex simulator.

you can do the dlcs early, or you could set up your character in a NG+ fashion, so console level yourself to like 50 or something, grind up some gear and then go start the story. whatever works for you - but i recommend doing them, they're pretty alright.

now everything has a preferred install / loading order, and a ton of shit just refuse to work together with other mods

All you need to do is get LOOT and hit a button. It orders the shit for you properly.

I never understand this, it literally takes you maybe 5 or 6 mods to get it set up. Most of its on the nexus and a few mods are on loverslab. Most mods have a installer to walk you through it. It would probably take you 40 minutes max to get everything set up.

If you willing to put a lot of time/effort into modding it can be a really good RPG.
Skytweak+Community uncapper let you customize the difficulty and grind exactly how you want.
The only problem is combat kinda sucks and mods barley make it better unless you want to play with realistic combat.

Load order matters especially when you use multiple mods that might touch on the same subject. Let's say you use a weapons overhaul that improves some of the rare daedric artifacts you find. And say you also got another mod that only changes their sell price. If you put the second mod lower on the install list, only the monetary changes will take effect and your first mod will be basically useless. You can use Wrye to make bashed patches to make some of the load ordering unnecessary, but it's still something you really have to pay attention to.

Ultimately, if you want to play modded Skyrim, you have to know how to use xEdit, Wrye, and Mod Organizer to manage conflicts so the mods you install actually show up in game and don't get overwritten in a way you don't want.

Here's the kicker, running SE with grass and enb, i get almost lossless performance adding grass, and what mostly kills my fps is AO from enb and with it, i get 45-50 fps steady, and without it, 55-60.
The only reason I don't really run SE is the lack of ENB presets and essential mods I really don't wanna miss out on or convert since a lot of them require fucking with converting hdt-pe to smp, and some with scripts.
