Goddamn love this. Two great examples that come to mind is Xion's fourth form in Kingdom Hearts: 358/2 Days, and Astral Birth: Void in Kirby: Star Allies.
Everything about those battles, from the actual fights to the buildup leading to them is amazing. Before you even get to them, you're battling through a brutal, high octane boss rush. And then, everything just slows down as the final fight begins, with 'Vector to the Heavens' or "Astral Birth" playing in the background.

Hard question, they're not really easy to get into, but Frontier is probably the best one given how it's a lot more forgiving and easier to break than the average entry, the DS remakes of SaGa 2 and 3 are also good entry points for beginners since they teach you the very basics of combat, but structurally, they're very different from the rest of the series.
It's not a casual series though and there's no handholding whatsoever, so either get yourself a PDF of the manuals or prepare to spend some time experimenting with the games' mechanics, from the SNES games onward you'll might restart your playthroughs a few times too.
