U3 cards are the fastest and they work fine with Switch.
U1 is second best after U3 (there is no U2).
In terms of speed:
U3 > U1 => Class 10 > Class 6 > Class 4 > Class 2
Official Switch branded cards by SanDisk are U3, Nintendo recommends Class 10 or better for optimal use.

if I can recall switch's micro sd card reader is capped at some slow speed but it shouldn't make a difference for actual gameplay.

U1 is technically faster than Class 10 but in devices that don't support U-class it functions equal to a Class 10 card.

Class 2 is the slowst, U3 Class is the fastest.
It isn't capped actually, there's speed tests that prove that it can utilize U3 speeds, here's a good source:

Then you want U3 since it's the fastest option available but the speed gains over U1 aren't very big for installed games, the difference is only big if you're using pirated XCI roms.
You do however want U1 minimum if you want decent speed.

If you're not going to be using XCIs or installing large NSPs then no, it isn't really worth the cost of U3 vs the cost of U1.
If you plan on using XCIs or installing a lot of large games as NSPs (as in piracy) then you might want U3 to save yourself some time since it really adds up especially with NSP install times.
I am going to be using this on a legit Switch. No hacking.
U1 then, U3 only truly benefits piracy.
For legit use you will see only 1-2 second differences in loading times so the much higher cost of U3 is not worth it if you're legit.

YOU CANNOT FIT 400GB ON SOMETHING SO SMALL.
when something is that cheap it means YOU are the product. Most SD cards come with tiny bits of spyware code written on them
it's not actually 400gb. it's more like 364gb.

This. It feels like false advertising at times, but I guess "364GB with 36gb reserved for processing/formatting" doesn't look as good on labels.
