Whatever you want, I personally go as just a normal sneak class with strong ass blunt weapons

breton+atronach for being basically immune to magic entirely with a decently high mana pool on top of that

master alchemy asap, collect flax on way to kavatch, use master alchemy to turn 1 flax into 1 extremely strong mana pot and it's as if you don't even have the mp regen penalty anymore

alternatively, just do what everyone else does and make a stealth archer

Breton Knight. That way your combat skills will level up for longer and you get a leg up in case you want to dabble in magic and a very nice magic resistance that's useful endgame.

if you just pound a single skill to 100, your attributes are going to be total shit while enemies level scale up the ass and you're just cursed to eternal sponge damage unless you crank down the difficulty slider

horrendous design there, but it also exists in morrowind, it just doesn't matter in morrowind as much because level scaling isn't a thing

I replayed it last week. Was pretty nice actually knowing what all the mumbo jumbo meant this time around since it was my first elderscrolls game.
Conjure clannfear wrecks. Alteration's shield was too OP so I stopped using it. All the city guards could only tickle me.

I like to roleplay as something similar to the agent class, using sneak and guile to accomplish tasks. Usually just based on the class pictures.
Alternatively, heavy armor and blunt weapons for kino rag doll and bashing skulls with war hammers.
