It's okay. It's a definitive improvement over Anthem but it's really hard to say "it's a really great game!". I've been enjoying it but it's hard to recognize Destiny as anything more than above average for it's Genre. Or maybe it's the best thing ever because how many competent looter shooters do we even have?

There's definitely different builds and weapons. There's 3 classes, all of which have 3 subclasses that you can further specialize a little bit. I'm mostly speaking from the leveling experience so far so I kinda just try out different weapons/abilities as I go along, but I imagine there must be some sort of "meta" in the end-game given that there's PvP in the game. Maybe someone who has been playing it for a while can elaborate better.

If you buy Forsaken you get it the two DLCs which preceded it. Frosaken is decent and did a lot to elevate the game out the slump that CoO and Warmind left it in.

You can. The campaign and adventures/whatever you encounter on your way are all soloable, only thing I saw that you may need a team for are "Strikes" which are basically mini missions with a team of 3 people. It's not complex like let's say WoW Mythic+ dungeons, most people won't even really talk to each other so you shouldn't worry if your problem is forming teams with others and coordinating anything.

Frosaken is like an expansion compared to the CoO and Warmind. It's got two zones, strikes, gambit and a raid with shit loads of lore, if that's your thing. Overhauls armor and weapons with more perks and give each class' spec a third tree.

you could do this but there are parts where they force you to do some stupid shit, like grind levels to do the next part of the story, or do what they call strikes, which are co-op side mission that they pair you with 2 other idiots to complete, or even tell you to play the pvp for armor you can't even equip because it's 500 power level, which is the secondary level after hitting level cap, kinda like armor rating in division, and you need to be like level 48 to wear it anyway

Well you have it for free, right? Why not give it a shot? In my opinion it's "just okay" in every aspect of it, especially the base game. It's not super long so it's not going to be a massive waste of your time. I've been enjoying it, but keep in mind I've been playing through the whole thing with a friend and it's hard it's moments.
Also my expectations have been completely tampered with because I played Anthem recently and also Titanfall 2 which was one of my favorite singleplayer campaigns I'd recommend to anyone. So Destiny 2 is both a really solid game (when compared to trash like Anthem) and incredibly mediocre and not worth playing (when compared to Titanfall 2's campaign).
tl;dr It's ok/10, you already have it so maybe just play it for a planet or two and you'll have a pretty good idea if you wanna keep going.

There is no way you were unleveled to do the main story in the game, unless you ignored every single quest in the entire game. By actually doing them I've reached level 50 before I even started Warmind. I have not been doing any of the playlists or anything extra.

Also to lay this to rest: Yes, you can play the entire campaign and most of the content completely solo or with whichever party you want to in Vanilla, except for Strikes, try to think of them as optional side content you can do if you want to. There's Destiny 2 vanilla which most of you seem to have because you snagged it for free at some point, there are two small expansions called Curse of Osiris and Warmind and a bigger one called Forsaken.
The game is pretty much only sold now as as the "Forsaken" edition which is all of the content above. There is also a "season pass" but that won't matter to you unless you are already at the level cap of 500 for items and own all of the above. It's not amazing, it's not terrible, if you already own it the only reason I can see why you may not want to give it a shot is , it's huge and unlike other games on the Blizz launcher there's no option to play before the full thing is done downloading.

D1 and D2 sold extremely well despite the awful reception for both games at launch. Warframe has a fuckton of players with hundreds/thousands of hours who love to buy platinum regardless of how fast you personally got bored with it. The Division seems pretty popular too but it never interested me personally so I don't know much about it. Then there's different looter shit like Diablo 3 and PoE or whatever. It's a very profitable "games as a service" model when done right, it's got the online, co-op, in some cases pvp with grindy / addiction feeding game design on top of all that. It's not hard to see how their potential is attractive to publishers. Thing is it's a pretty tricky formula to nail down right so any really good games of this type are going to be few and far between.

I wouldn't say it's dogshit, but it is hampered by constant balancing issues. Part of it is simply unavoidable because of the huge pool of RPGish weapons and armor. You can't expect the game to have a bunch of unique gear designed for both PvE and PvP and to be perfectly balanced for both those activities. That just can't be done unless you streamline everything severely but then the loot becomes boring and you don't care about getting new stuff anymore. As such metas end up being formed and you mostly see the same weapons being used in PvP. You can use most weapons viably if you aren't a shitter, but it does get boring to fight against the same types of weapons so much, in my opinion at least. Basically there's plenty of room to change your own playstyle but the people you play against will mostly be the same. Maybe that's the case for most competitive shooters though, I dunno.
What's not as inexcusable is how Bungie can't make up their minds on how to balance class abilities, or mainly supers. But this is also because the community is a bunch of retarded fucking crybabies who don't know what they want and Bungie ends up caving in to their whining. If these casual fucks are punished for using their super poorly they go and cry about it being a bad super instead of learning to use it better. The problem is if a super feels lackluster to them, they are always comparing it to the top 1 or 2 other supers in the game and want all supers on that level, instead of nerfing the 1 or 2 OP supers. And it ends up being this constant back and forth mess where there's always a couple of supers that are stupidly powerful and there is nothing you can do to counter them and the things that CAN be countered if you play well or the person with the super plays poorly (as it should be) end up feeling shit in comparison.
Also the competitive ranked mode is awful unless you have a solid team of 4, so pretty much only casual quickplay is worth playing.

Also I just wanted to note that despite all the balancing issues and the shitty state of ranked pvp, Destiny is really the only game that's filling my kind of niche for competitive shooters at the moment which is why I still enjoy it. Realismshit like CS is too straightforward for me, I prefer stuff that's a bit more fast paced and focused on movement. Quake is too dated, and Quake Champions is a clunky ass mess. I'm sick of team focused hero shit like Overwatch, BRs have too much downtime... Destiny is kind of a middle ground between high mobility arcadey stuff like Quake and realismshit like CS or BF.
I think the only other game I might like is Titanfall 2. I haven't tried it yet, it may or may not replace Destiny for me when it comes to competitive shooters, but probably not since it's an almost abandoned game at this point. R6 Siege might be fun but that'd be more for an appreciation of tactical mechanics than running and gunning mechanics.
It would be cool if Bungie added an arena mode type of PvP that mimics Halo/Quake, where everyone starts with the same stuff and pick up weapons from the map, but that will literally never happen, so the best I can hope for is that they become better at tuning class abilities and stop going so fucking crazy with some of the exotics and pinnacle weapons because goddamn it takes them half a fucking year to nerf something when it turns out to be overpowered. Even with things that were fucking blatantly overpowered before they even came out like One Eyed Mask.
