properly specced out an ultima weapon gives mad boosts to whatever characters have that weapon proficiency, regardless of element. you can and should use ultima weapons in any grid regardless of element if you have the right characters.

so yeah, pick sword if you have a lot of sword characters.

What about the PWR rating on the homepage (and the digits on the star to the right of it?) I understand it's some indication of my party's current power, but what's its uses? I made some elemental mismatch party with shitty grids and it shows as 20 stars, while my elements with more thought out grids are weaker (18, 14, etc).

The power rating is useless and misleading, it mostly comes from your weapons ATK rating and doesnt account for skills in them
So grid of nothing but 5* CCWS would have insane power rating compared to actual grid of M1 weapons but wouldnt do any damage

it's vaguely useful early on in terms of whether or not you'll be able to handle this particular battle/raid, but like the estimated damage in-game calculator it fails to take into account a lot of stuff. i think it's mostly based off pure big dick total ATK/HP numbers instead of like omega atk boosts and things.

it's honestly not very useful, since you get back any materials you spent on a raid if you fail it the first time, you're better off just trying everything firsthand to see if you can clear it.

There are 10 types of weapons.
Disregarding weapon type she would have a decent shot, but there are also a lot of other characters either more relevant or popular than her or could have more interesting nuances to them that could make them a bit more unique.
Even regarding weapon prof, looking at the spear prof characters you could make a lot more interesting playstyles like Razia and her gun lance, Anne/Juliet with their stands, giving Athena a SnB style but replace the sword with a spear, or someone like Nezahualphilli who has a lot of potential for a cool moveset just on aesthetic alone.

It's a turn-based RPG.

Well you use those characters you roll to fight raids or solo quests to get weapons to make your grid stronger and stronger grid means your characters hit for more damage which means you can do even harder content and farm even better weapons
Then when you hit the maximum strong you just make meme teams for fun or solo the super hard raids

Turn based real time* RPG and that's what makes the game interesting since speed is an actual factor while playing instead of just sitting there waiting for everyone to take a turn.
