I've been playing this for 50+ hours now and I don't know who to side with. I haven't picked Stormcloaks or Imperials, I haven't joined the thieves guild, I haven't joined the companions. I haven't done shit. I'm just discovering locations and finding new The Voice words.
How shitty is my playthrough so far?

Just wandering around doing side quests. I'm scared that if I join one group it'll lock me into a decision I hate and ruin the rest of the game for me.

Literally nothing makes a difference. You can do everything, it's shitty skyrim for fucks sake.
What mods are you using? I recently started a new playthrough with Beyond Reach and Bruma and some graphics mods.

There is no alternative to the Thieves Guild. It is a linear story. Joining Stormcloaks or Imperials changes very little. It has no restrictions and the quest is almost exactly the same no matter which you join.
The Empire is the best chance Men have against the heretic Mer race. A bunch of disunited kingdoms have no chance against the Aldmeri Dominion.

Thalmor propoganda, the Empire will never recover. That was the entire point of the WGC. The only hope is an independent Hammerfell and Skyrim.

Imperials, obviously. The only reason the empire is under Thalmor control is because they won the war. In moments like this, actual humans need to stick together. Nobody in the Empire (except for some opportunists) is happy with this occupation.
Just going solo and waging war against the empire is just working in the Thalmors' favor. Dumb Stormcloak fucks. If they just tolerated the injustice a small while longer, gathered their strength and then finally helped the empire drive those fucking elves out, THAT would have been the productive thing to do, but NOOO. The average Stormcloak retard can't think that far. Instead, he does precisely what the Thalmor want and kills his fellow Humans. Absolute perfection.

The sides do not matter at all. The missions are almost identical, and the factions are pretty simplistic. The proper way to play skyrim is to just walk off in a direction and explore everything you find along your path and occasionally pick up bounties in small towns. Aside from a select few quests, most of the quests the developers intended are pretty boring.

The thing is that all this relies on the Empire's full cooperation. Tullius alone probably wouldn't allow it but Cyrodil is full of Thalmor agents and diplomats with a lot of cash. The fact that they put a hit out on the Empire says it all really.
An independent Skyrim is bad news for the Aldmeri Dominion, they require Imperial assistance to project force that far.
Yes and no. The thalmor captured and tortured him and definitely instilled a large hatred of elves into him. However, in their dossier on Ulfric it's stated that his rebellion is useful only so long as the stalemate continues. One side winning over the other would fuck with their plans overall.
Not just a stalemate, but throwing men into Skyrim and gaining nothing will weaken the Empire both militarily and politically.

Thieves guild does have you put a few npcs in jail.

This is the thing that decides it for me. The lore is that before the Great War the Thalmor agents and spies were so entrenched they managed to capture and kill every Blades agent in Alinor, Valenwood and Elsweyr without the other Blades agents having a single clue on what was going on.
Then the Concordat treaty gave the Thalmor rights to operate WITHIN THE EMPIRE ITSELF to hunt down all the remaining Blades agents, plus any religious sects they don't like, plus any anti-Thalmor agitators. They get to boss around the Imperial Legion.
If the Thalmor infiltrated the Empire before the War, afterwards it would be a police state where all the police are elves.
Effectively there is no Empire anymore, just a puppet state of the Thalmor.
Tullius might talk a good talk about needing to prepare for a war against the Dominion but if he or anyone else took moves to actually do that he'd either be killed and replaced or his plans ruined through espionage.
Of course this is all a video game so this might be the realistic conclusion but what will happen in-game is whatever Bethesda throws a dart at.

The elves were fucked as soon as a Dovahkin came into being at the same time their plot kicked off. Lorewise, the Thu'um is strong enough to shake planets, and dragonborn have complete mastery over it.
They like scuttle a lot, it's a local delicacy made from the flesh of these little dudes and is apparently similar to cheese.
