Grookey: its various names and design kind of suggest a connection to music. Maybe Grass/Rock for the pun? If they introduce a Sound type or something that's also a possibility but that's out there right now.

Scorbunny: Probably Fire/Electric, Fire/Ground or pure Fire. Depends on where the concept is taken.

Sobble: The logical endpoint of the invisibility thing is Water/Ghost, because Decidueye sets a precedent of starters not needing to be a spirit to be a Ghost type. Psychic type is also a possibility.

The great majority of the monkey family in pokemon has been either normal or fighting type, so grass/fighting or grass/normal are the most predictable, grass/normal would be really cool to see.
From what I've seen from the trailer, the bunny looked like it used the static power generated by its running in order to create heat, so I would assume it would be a electric/fire pokemon, also electric has always been the home of the fastest pokemons, so it would fit perfectly.
For the lizard, this is actually the hardest to guess. Since it is lizard-like, it could become water/dragon, but a dragon type for a starter is something that doesn't fit quite well, since dragons are by tradition late-game slow experience gaining pokemons, both traits that don't fit well for a starter. Since it is a shy pokemon, it should prefer to fight indirectly and from a hidden position, types that fit this personality are dark, poison, ghost and psychic, but that being said if the bunny does end up being an electric pokemon, there is no way in hell that GF isn't going to give the water starter a way to not die to him, so it would probably get a typing resistant to it, which means ground, grass, electric or... dragon.
