Limited resources as it discourages turtling and resource hoarding

Both, some limited some renewable.

AoE style, limited at the beginning, with options for total self sufficiency.

I hope you aren't implying starcraft has unlimited resources?

In between. Limited natural resources, like game, wood, gold, etc, but the opportunity for unlimited through a slower and less efficient means, like farms, buying/selling at a market, trading between allies, etc.

Unlimited resources doesn't always encourages turtling tho.

Vespene gas is unlimited in broodwar sure, there's maps in RA2 with those buildings that generate money indefinitely.
In wbc3 mines eventually dry up but you can have heroes and units that generate resources forever, at least a few of them-

You'd have to change how building works entirely to do that but it could work i suppose
