You might find something new, but it won't make that something new good or well designed.
If you like wandering virtually aimlessly and reading into things, you may as well just jump on into No Man's Sky. Otherwise, the "meat" of the game that revolves around the series' staples is pretty much atrocious, from the Dungeons to the Characters. If you've done Hyrule Castle once, you've done it a million times, and that's about the only worthwhile element of the main game.
If you're just looking to fuck around in an open world for ten hours there are a Hell of a lot better choices.

BotW is really replayable if you're interested in speedrunning or self-imposed restrictions, but not so much if you're only going to be exploring at a leisurely pace.

My second playthrough was different enough from my first one that I think it's worth at least trying out. I don't know if it's the most replayable game in the world but it's infinitely more replayable than literally any other Zelda game.

I guess it depends on if you feel like you've forgotten the shrine solutions.
I went back to try replaying it a few months back, and I couldn't play for more than a few hours because a second playthrough doesn't bring anything particularly interesting to the table.

Did you seriously grinded in this game? You can just activate the shrine without beating it.
It's a good game, but it has zero replay value. If you like the game and you want more, then just try to 100% it on your old save. (unless you already did.)
The most replayable Zelda is OoA/OoS, because you can play them in different order.
