Because he regretted how things went down with Arthur and Micah and he was there to kill Micah.
I guess for Dutch it was less about the money and more about pursuing his weird vision of the world he wanted to come to life. His gang was scattered to the winds so there was no real use for the money anymore. I'm assuming he stole a bit before leaving.

They needed Dutch to live obviously but they also wanted to have that retarded Mexican standoff. It's overall just a cringe story.

RDR2 makes seeing Dutch in RDR1 a lot more tragic and gives him so much more backstory. Also explains why he got together with a band of natives.
I still don't understand why Dutch was up on the mountain with Micah. It would have made infinitely more sense if he didn't show up again after Arthur died.

Seeing Micah trying to trick John was what did it. All the years after the gang fell out, Dutch probably got to thinking he'd made a mistake doubting Arthur and John. Letting go of the idea that Micah, and by extension he himself, was ever a 'good' individual was the last bit of his ego being let go. I believe this was the moment where Dutch no longer could pretend he was being a hero the whole time.
It was his way of apologizing to John and ending a chapter. When Arthur is dying Dutch's face screams guilt, shock and regret. When Micah mentions "Arthur is dead", Dutch immediately looks at him in a "oh no you didn't" sort of way.
Dutch was there to kill MIcah but Micah mocking Arthur probably made Dutch attempt to give John a life (which, btw, is what Arthur wanted) and disappear.
