why has Street Fighter been the top dog of fight games since forever when other fighting games have more interesting mechanics, have much more flashy comboes and just look better?

Not really? 3 and Alpha was basically an anime games. Infinites, TOD, unblockables, 8-2 match ups, you name it those games probably had it. Alpha, in particular, is probably one of the most broken fighters ever to exist. The isms were fucking nuts, especially v-ism.
2 has a lot of zoning but that's because characters like old Sagat are FUCKING nuts, but there's still characters like Claw who can put you in a constant 50/50 to death with his claw slash/throw crap. They even soft banned Akuma because the character is just so nuts compared to everyone else. The HD remix actually tried to make him balance and he was STILL too broken. Unthrowable frame 1 invul fireballs, true block-strings of grounded normals to air fireballs, teleport 50/50 cross ups and constant reliable safe jump oki pressure in air fireballs.
4, often criticized the most of any game before 5 was still pretty broken until ultra by which most of the fun got removed. Before Ultra though, there were plenty of unblockables, inescapable vortexes and tons of janky shit.
5 is the dullest game by far and probably the closest to what you're actually talking about, but even 5 has pretty degenerate offense because they don't want you having any defensive tools.
Touhou Hisoutensoku, the standalone expansion to Touhou Hisouten ~ Scarlet Weather Rhapsody, is a fighting game that mixes traditional fighting game gameplay with bullet hell/Shmup concepts of projectile warfare. When i refer to "soku" i refer to the combination of Hisouten and Hisoutensoku.
Gameplay-wise, basically, everyone is a different flavor of zoner, and everyone has access to "graze", a feature that lets you dodge through projectiles but makes you unable to block ground attacks. there's also a random spellcard system that acts as a replacement to normal super bars and can be used for anything from super moves to upgrades/swapping of specials to permanent stat modifications to more fun effects like "destroy top card of opponent on hit" and "cause an earthquake that can hit everything, including the user"
