Except the time period happens. Like, imagine someone trying to assassinate him with a remote detonation bomb. They would wait for Diavolo to walk next to it, press button and the bomb would explode, killing Diavolo.

Thanks to Epitaph, he would foresee the bomb, activate King Crimson's ability, locking everyone else into playing that timeline, but he would instead walk away while the would-be assassins would detonate the bomb, blowing it up. So when King Crimson's ability ends, the bomb would've detonated, while Diavolo himself still has the experience in memory. He wouldn't have those memories and you wouldn't have an exploded bomb without those events happening. He were to erase time, there would be no continuity between the events. Calling it a time erasure is factually wrong.
