An easy fix if you want to maintain the realism of calibers is to just make ammo handling automatic. Buy ammo from the gun itself if you have that sort of mechanic, make pickup automatic, display how much you have left on the hud. Ect. It's only annoying when games try to force you to micromanage shit.

Idiots will just blindly say yes, but its actually very dependent on the gun. Guns chambered for 5.56 NATO military spec and .223 Remington are not 100% identical. The Mil Spec 5.56 NATO chamber has a longer leade before the bullet engages the rifling. Putting a .223 into a military spec 5.56 NATO chambered gun will probably never give you a problem, but putting military spec 5.56 NATO round into a gun chambered for .223 Remington can lead to unsafe levels of over pressure because .223 Remington chambers are allowed to have a shorter leade.

can confirm. A good handful of certain ammo types are just less pressurized like .38 special can be shot out of a revolver chambered in .357

This is because you aren't just picking up loose ammo. You are picking up magazines. You can't stick an Mp40 magazine into a Sten gun or vice versa. Even though the Sten magazine is based on the Mp38 mag, its not identical. They require some modification to work.

Ammo I wasn't a really a consideration in that games though so I can see that being a issue.

The only game I can think of that has a Lee Enfield and a Hi Power in it is Day of Infamy.

Hey was ok with it until Destiny 2 just cut heavy ammunition synthesizers and lmgs completely.

Why not cut Ammo from everything? Or everything except the best guns? It's not like having ammo collection mechanics balances things or makes the game more realistic. On top of that, ammo limitations make you not wanna play with certain weapons either due yo having to waste for similar effect with other guns, or saving it for "when you need it"
Other option is just give calibers damage numbers rather than guns and make guns just different precision vs fire rate options
